Quality & Safety Testing for Spice Exports: Aflatoxin, Pesticide Residue and Microbial Limits

Aflatoxin: A Mould-Produced Toxin, Not a Processing Defect
Aflatoxins are naturally occurring toxins produced by certain Aspergillus moulds, and they're a genuine risk category for spices — chilli in particular — especially where storage or drying conditions allow mould growth. This isn't a defect introduced by careless handling alone; it can develop in the field or during drying and storage if conditions aren't controlled, which is why testing the actual lot matters more than trusting general handling practices. Maximum limits are set by destination-market regulators (and by the Codex Alimentarius as an international reference point) and differ by market — a lot compliant for one destination isn't automatically compliant for a stricter one.
Pesticide Residue (MRLs): Different Limits in Different Markets
Maximum Residue Limits (MRLs) cap how much of a specific pesticide can remain on a commodity, and they're set per pesticide, per product, per destination market — not as one universal number. The EU's pesticide MRL framework is generally regarded as stricter than Codex reference limits, and a shipment tested clean against one country's limits can still fail another's. Testing is typically done via a multi-residue lab panel (commonly GC-MS or LC-MS) rather than a single pesticide check, since a real agricultural product can carry residue from more than one source.
Microbiological Testing: A Different Risk Category Entirely
Microbiological testing checks for live contamination — commonly Total Plate Count, Salmonella, E. coli, and yeast & mould counts — which is a separate concern from aflatoxin (a toxin) or pesticide residue (a chemical residue). Salmonella in particular is treated as zero-tolerance in most destination markets, not a threshold to stay under. Dried spices are a lower-moisture product than fresh produce, which reduces but doesn't eliminate microbial risk, particularly if processing or storage introduces moisture or contamination after drying.
A Note on Treatment: ETO's Regulatory Status Has Changed
Ethylene oxide (ETO) treatment was historically used in the spice trade to reduce microbial load, but its use has been significantly restricted or banned in a number of markets — the EU tightened enforcement against ETO residues from 2021 onward — following concerns about the compound itself being carcinogenic. If a supplier mentions ETO treatment, ask specifically whether it's permitted for your destination market before accepting it as a quality-improvement step; steam sterilisation or irradiation (where permitted) are alternative treatments used in some markets instead.
What to Actually Ask a Supplier For
- Which specific tests were run on this lot — aflatoxin, a named pesticide panel, and/or microbiological — rather than an unspecified "quality tested" claim.
- Which limits the results are being checked against (Codex, EU, FSSAI, or your specific destination market's own limits), since these genuinely differ.
- Whether any treatment (steam, irradiation, or otherwise) has been applied, and whether that treatment is permitted in your destination market.
